Emulsified foods
In mayonnaise, dressings, dips, and emulsified sauces, liquid vinegar can sometimes over-dilute the formulation, leading to phase separation or thin textures.
Sodium diacetate and natural bea.DryV.N provide a highly concentrated acidic flavour and an effective preservation hurdle without adding extra water, helping to maintain a thick, creamy emulsion while preventing the growth of acid-tolerant molds and yeasts.
In some formulations, they can eliminate the need for hydrocolloid thickeners.
Animal feed preservation
Sodium diacetate is widely used for animal feed preservation. It acts as a fungal inhibitor in stored grains, silage, and compound feeds, preventing the development of hazardous mycotoxins.
As a feed acidifier, it lowers the pH of the animal's gastrointestinal tract, promoting a healthy gut microbiome and improving nutrient digestibility.
Dairy nutrition
In dairy nutrition, calcium acetate is used in dietary formulations for transition and freshly lactating cows.
It provides a highly bioavailable source of calcium that is rapidly absorbed, helping to stabilize blood calcium levels immediately after calving and preventing the onset of milk fever (hypocalcaemia).
Milk replacers
Calcium acetate and sodium diacetate are incorporated into milk replacers for young calves.
Sodium diacetate acts as a stabilizer to prevent microbial spoilage of the reconstituted liquid feed, while calcium acetate supports proper bone development and mineral balance in rapidly growing animals.
Pet food
In both wet and dry pet food, sodium diacetate and natural dry vinegar are used as preservatives to control mold and bacterial spoilage after packaging.
Furthermore, their mild acidic, savoury taste acts as a palatability enhancer, particularly in cat food formulations, where slightly acidic pH profiles are preferred.
