Effective protection against mold and rope spoilage

Calcium acetate and sodium diacetate are highly effective anti-microbial agents in yeast-raised and chemically leavened baked goods.

Sodium diacetate releases free acetic acid, which disrupts the cell membranes of molds and inhibits the germination of Bacillus spores - the primary cause of rope spoilage, a defect that produces a sticky, slimy crumb.

Calcium acetate provides comparable antimicrobial performance while also supporting the strength and stability of the gluten network. Calcium acetate and sodium diacetate contribute to improved food safety in flour and bakery applications.

Clean-label preservation with bea.DryV.N

In seasoning formulations, sodium diacetate and natural bea.DryV.N act as free-flowing, solid-state sources of acetic acid.

Traditional liquid vinegar would cause caking and compromise the quality of a dry spice blend, whereas sodium diacetate provides the sharp, pungent acidity required for barbecue rubs, pickling spices, and culinary seasonings while maintaining a free-flowing powder.

Authentic flavour enhancement

Beyond preservation, bea.DryV.N, in particular, imparts a rounded, authentic "sour" note reminiscent of traditionally fermented sourdough and can be labelled as a natural flavor.

This allows industrial bakers to achieve an authentic artisanal flavor profile within modern, high-efficiency production processes, in contrast to propionate-based products, which can lead to an unpleasant off-taste.
