Sodium diacetate is used in the food industry as a preservative, acidity regulator in baked goods and in meat products and as a flavour enhancer, e.g. on crisps and in salad dressings. It is also used in the pharmaceutical industry in kidney diallyse concentrates, as a buffer solution, as a component of reagents and as a preservative.
